Yumgo, the vegetable substitute for eggs

Yumgo invents the vegetable egg. The young start-up supports catering professionals and food manufacturers in replacing eggs in recipes.

“It is necessary to change our eating habits. Gold the egg, most consumed animal protein in the world, is irreplaceable” : Yumgo was born from the idea that at a time of changing eating habits, in a context of inflation, shortage and search for sustainable and responsible solutions, we must propose concrete and unique solutions. Yumgo invents the 100% plant-based egg thanks to solutions that replace the whole egg, egg white or egg yolk in sweet and savory recipes, with the same functionalities, the same gestures, and the same results as with eggs. Solutions based on short ingredient lists, simple and allergen-free. Three ranges are available : Whole Yumgo, White and Yellow in liquid format (1 L, 5L and 10L). Latest addition to the range : “The whole egg”, with an even shorter composition, available in powder format (1 kg or more on order).

Mixed or 100% plant-based pastries
Yumgo enables the development of egg-free ranges, mixed or entirely plant-based, on bakery and pastry products, buns, macarons, travel cakes or even quiches, mayonnaises and many others. Yumgo does not offer professionals just one product, but solutions and support to accelerate the development of sustainable ranges and reduce the carbon impact of food. Bringing together food engineers and professional chefs, Yumgo’s research and development team advises food professionals in their transition projects towards what it considers to be “the food of the future”. Objective? The development of products and recipes combining simplicity, innovation and delicacy, from design to industrialization…

“More responsible and ethical” gastronomy
The start-up was created by Rodolphe Landemaine, baker-pastry chef, founder of the Maison Landemaine and Land and Monkeys bakeries and pastries, and by Anne Vincent, expert in international consulting and management. The duo wants to facilitate access to “more responsible and ethical” gastronomy.. The Yumgo team is currently made up of 10 people to support professionals in the agri-food industry.. Yumgo has received several awards for its innovations : European Plant-based Protein Awards for startups 2019, National Agropole Competition 2020, Plant Food Trophies 2021, Sial innovation Awards 2022, Shira Green Awards 2022, Plant-Based Taste Award 2022.
