At the end of the regional final for the best apprentice in France (MAF), Pastry specialty, Marine Guignard, apprentice of the academic CFA of Reunion, ranked first, winning his place to defend, April 8 in Dijon, the colors of Reunion at the national final, against the 15 finalists from other regions of France. Holder of a CAP Pastry chef, apprentice in additional pastry-ice cream-chocolate-confectionery studies at the Christian-Antou hotel high school, Marine Guignard was the only overseas candidate. The test, which started at 6 a.m., consisted of making, in eight hours at most, two chocolate tarts, 16 chocolate éclairs, two saint-honoré, 24 chocolate candies, 24 sweet petit fours with a fruit from Reunion Island, and an artistic piece made of chocolate and sugar. The forty-fifth edition of the competition for the best apprentice in France took place at the Ferrandi campus of the Cité Internationale de la Gastronomie et du Vin de Dijon.. The title of best apprentice in France in the Pastry Chef specialty 2024 went to the candidate from the Île-de-France region, Laëlya Van Der Vliet.
