More than a fashion, frozen mochi, inspired by a traditional Japanese dessert revisited by modern European pastry making, embodies a new art of living at the crossroads of flavors. The French manufacturer So Mochi is a recognized player in the high-end frozen mochi market in France and abroad..
Born in Provence in La Ciotat, the So Mochi group has been reflecting the elegance and prestige of mochi in France for five years. The group first created the Mochiri brand for the CHR sector. With his know-how, In just four years, it has become number one for frozen mochi on this market.. A second brand, the Mochi Company, was then created to meet the expectations of the GMS. Frozen mochi, taste journey as much as small pleasure, is experiencing real popularity in mainland France. The founders of So Mochi, Julien Bondo and Jonathan Stioui, recall their own quest for frozen mochi. « In 2015, we are training as an ice cream pastry chef alongside a great chef from Vaucluse. In 2016, we are going to Asia to improve our skills in traditional Asian pastries. Respect for taste and quality remained a priority through the rigorous selection of ingredients and the recruitment of qualified pastry chefs. » And this is how associated with industrial expertise, the So Mochi group has succeeded in making frozen mochi while respecting both the tradition of silky rice paste and French ice cream know-how.
Making frozen mochi
An iced mochi is the refreshing combination of pastry ice cream coated with a fine rice paste with a silky texture. “Our rice dough is made with a mixture of several rice flours delicately selected in order to obtain a perfect balance and a silky dough. All our ice creams are created in our laboratory by a master ice cream maker. These are 14 fragrances guaranteed without artificial coloring, gluten-free and 100% artisanal. These simple ingredients are carefully selected to preserve the intensity of the taste”, specify Julien Bondo and Jonathan Stioui. So Mochi has a 1000 m2 production factory and a 950 m2 logistics center located in the south of France, with the latest machines for producing its 14 flavors of frozen mochi.
The 14 sweet treats of the year

Originally inspired by travel, but also a passion for Japanese gastronomy, the So Mochi group reflects the idyll on the palate. When the first ranges of mochis come onto the market, the creators wish to transmit their love for this gastronomy. It looks neat, given that in five years, the brand is growing, grows on the web, diversifies its partner portfolio, but also its range.
