Good news for those who consider sugar the enemy to be defeated. There is a new alternative, organic and natural, as authentic as white sugar is industrial : date syrup. It is certainly a sugar, but above all it is a fruit. Date syrup is not only a real delicacy, but it has many nutritional benefits. Its use is not new : it dates back to the Mesopotamian era of Antiquity ! Cuneiform writings from the 3rd millennium BC already mention “date honey”. The technique has of course evolved : a method of drying dates that lets the juice flow, we moved on to cooking in water plus pitting, followed by pressing for juice extraction. This is then reduced by cooking over low heat until you obtain a liquid of a beautiful brown color.. This process, completely natural and nicely low tech. Pépite dates are of the Deglet Nour variety : they are grown in Tunisia. The syrup preserves the virtues of Deglet Nour ; in addition to being a natural sweetener, it has a high fiber content (more fiber than in agave syrup). It is also a good source of potassium. For this syrup, we use dates from the sorting differences of the dates in the mouth (dates out of caliber, texture and shape that leave something to be desired). We thus avoid waste and develop a new outlet for producers..
Multiple culinary uses
Crepes, oatmeal, yogurt or ice cream, smoothies, shakes, iced coffee or tea… As a topping or for a sweet touch, the date syrup provides softness, color and flavor. In a pastry recipe, it advantageously replaces sugar. Unsurprisingly since it comes directly from the date palm, we find a slight fruity note and to its sweetening power is added its caramel taste. It is also used in cooking, to caramelize vegetables (carrots, Brussels sprouts, turnips…), or to spice up a vinaigrette or a meat or fish marinade.
