Escape, one of the most northerly distilleries in Scotland, announces a repositioning and the launch of its new range composed of three 10-year-old single malts, 16 years old and 21 years old.
Escape, whose name means “boat” in old Nordic dialect, was founded in 1885 by MacFarnale and Townsend. Since, the distillery perpetuates the tradition of manufacturing methods that have remained unchanged. It is one of the last distilleries to operate manually 24 hours a day. The fermentation time is one of the longest in Scottish whiskey. : 160 hours, almost seven days. This slow fermentation followed by distillation in the Lomond wash still, a type of still, installed in 1859, gives Scapa whiskeys very particular aromatic notes for an island malt. The new Scapa range consists of three expressions : 10 ans, 16 years old and 21 years old. Each whiskey is aged exclusively in American oak barrels revealing a rich and complex aromatic profile with tropical and spicy notes., signature of the distillery.
