Chocolatier Pascal Brunstein and Truffettes de France revisit the truffle, this monument of French confectionery, to offer a range of fine chocolate in supermarkets under the Truffettes de France brand from Chocmod, previously distributed internationally.

“A good truffle is synonymous with indulgence. Its tasting, preferably slow, provides a moment of pleasure and goes perfectly with a festive and friendly moment. The chocolate truffle is expressed in a delicate balance of its textures and flavors, between external bitterness and internal sweet taste. Truffles are best enjoyed at around 22°C., ideal temperature to have a melting heart texture. It can be accompanied by a good coffee, or even a cognac, the idea being to enjoy it with a product equivalent in terms of intensity. » It’s by benefiting from all the art of Pascal Brunstein’s chocolate making, Meilleur Ouvrier de France, world chocolate champion, that Trufettes de France has imagined a range of three truffle recipes after multiple trials, tastings and technical feats intended to make them on a large scale, to make them accessible to as many people as possible.

CHOCOLATE TRUFFLES 70% NATURAL COCOA
For purists, Pascal Brunstein imagined an all-chocolate truffle, 70% cocoa. The choice of the coating of Ecuador origin gives it a powerful and delicate aromatic profile and blends in perfect balance with the West African cocoa used at its heart..

 

HEART TRUFFLES WITH HAZELNUT PRALINE
By incorporating roasted hazelnuts, delicately crushed with sugar, the praline brings the requirement to the service of the taste experience. Stuffed with pieces of feuillantine, this recipe is the epitome of crunchy deliciousness, sheltered by a milk chocolate shell.

 

HEART TRUFFLES WITH POINT OF SALT CARAMEL
Under the tooth, this exceptional truffle reveals a melting caramel heart based on a blend of two caramels created by Pascal Brunstein. One aromatic with roasted accents and the other with milky notes, lightly buttered, serving a balance between power and softness. All enhanced by bits of caramel and a touch of salt highlighting the combination of chocolate and caramel.

THE MODERN CHOCOLATE FACTORY : CHOCMOD FOR INTIMATES
Born in Tourcoing in 1948, Chocmod shines internationally thanks to two well-kept know-how : French truffle and marshmallow. In the 1980's, the company has begun to conquer palates around the world under its brand Truffettes de France. In 2011, Chocmod has made the bet to conquer America, by creating in Saint-Jean-sur-Richelieu, Canada, a manufacturing site capable of deploying its French recipes across the Atlantic. Success awaits. Chocmod now produces nearly 3,6 million chocolate truffles and a million marshmallows per day.
