Mozzarun's Christmas mozzarella

The second edition of the Lyon international cheese and dairy products competition is held on December 3. Among the hundreds of cheeses from around the world that will be blind tested on this occasion, this year there will be two Reunion cheeses : two mozzarellas ! Two creations by Italian chef Alessandro Lampis, founder of Mozzarun, whose bet to launch local mozzarella production on the Reunion market is one of the events of the year. For the faithful, already numerous, Mozzarellas Mozzarun, no doubt : he has his chances. Without fail, a mozzarella produced in Reunion and flavored with vanilla will arouse curiosity and interest ! Firstly, the Fior di Latte (milk flower) Mixed race, mozzarella whose sweet freshness is enhanced by a delicate final note of vanilla (one of the successes of Mozzarun which produces 200 kilos per week). On the other hand, a novelty, more ambitious and more anchored to the Reunion region : Burrata Metisse Limited Edition. Alessandro Lampis got closer to Nicole Leichnig (The Blue Stopover) and Alexis Rivière (Maison Payet & River), two lovers of the pei tradition, to create this unique product. The cow's milk burrata is here flavored with blue vanilla (aged six years) and its creamy interior, a few drops of galabé syrup, the original pure and raw sugar from sugar cane. Sweet and sour combined with the freshness of Italian cheese. Quite in the spirit of Creole cuisine. « With Mozzarun, my goal is to introduce the taste of super fresh mozzarella to the people of Reunion Island, but also to create something Reunionese” underlines Alessandro Lampis.

Truffle mozzarella for Christmas

Another Mozzarun burrata will leave memories this year on Reunion tables. Truffle mozzarella is not a new thing in itself. It is produced as the holidays approach in Italy for export, mainly to France (where mozzarella has just dethroned Camembert as the first cheese consumed !). The version imagined by the Italian chef is a burrata with broken truffles which is differentiated by its truffle content., and therefore a taste, much more pronounced. “I want us to smell the product” insists Alessandro Lampis. And it’s another vision of mozzarella that reveals itself to the ignorant people that we are : a mozzarella that can be enjoyed alone, spread on bread, and no longer just prepared in salad.

Mozzarun has found its audience

Co-founder of Mamzelle Pizza pizzerias, Alessandro Lampis originally wanted to offer his customers a superior quality mozzarella due to its freshness., and no longer imported. This is how the idea of ​​local production was born. The observation that mozzarella was already enjoying some success, the intuition that there was a local market to develop, the entrepreneurial talent of the Italian chef, the support of an Italian cheese master, did the rest. Mozzarun, whose production workshop is located in Trois-Bassins, launched on March 1st. The company created four jobs. Its mozzarellas are already available in 50 points of sale, Supermarkets and local shops, and à la carte of 90 restaurants. Mozzarun not only offers an alternative to products imported from Italy, the company expanded the mozzarella segment by recruiting new consumers. Exit, paradoxically, to also stimulate imports. Because although Mozzarun is able to increase its production to meet demand, brands continue to import mozzarella from Italy. “People can compare. Our super fresh mozzarella can be consumed 24 hours after its production, while that imported from Italy has already largely lost its flavor by landing seven to eight days after being produced. We, we are sure of the quality of our products and our prices are lower than imports, with one exception where the difference is 20 cents ! » argues Alessandro Lampis. As for the packaging of Mozzarun, it allows, unlike imported products, to easily locate the products in the range and, its transparency, to see them. An additional advantage.
