La cofermentation : a Reunion innovation on the international rum scene

We thought we knew everything about making rum. It was without counting on the Isautier house. By creating a new process for the simultaneous fermentation of molasses and cane juice, the Saint-Pierroise distillery creates a surprise in the rum world.

Rums are generally divided into two categories : pure cane juice rums, otherwise called agricultural rums, and molasses rums called traditional rums. These two categories express very different aromas. Maison Isautier is one of the rare distilleries in the world to possess this dual know-how.. In 2023, the oldest rum factory in Reunion Island offered an innovative range, composed of blends of white rums, pure cane juice and molasses rum. Called Double Agent, this third category was new, and the Isautier house opened the way. It came back in force at the beginning of October with an even more daring novelty : l’Agent Double Fusion. Agent Double Fusion is a unique rum in the world of rum : the fusion of raw materials, 50% molasses and 50% cane juice. These raw materials are in fact not only assembled, but well fermented together this time. Harvest, fermented and distilled in 2021, this vintage had a rest period of two and a half years in vats.

A rum with salty and sweet notes
This innovation coming directly from Reunion Island was awaited by global rum professionals, because co-fermentation had never been successful until now. Agent Double Fusion was presented at the Whiskey Live spirits show, which was held from September 28 to 30 in Paris. “This is the work of all the teams at Maison Isautier and in particular that of the director of the distillery, Marie Ferrand, which is today hailed on the international rum scene”, said Cyril Isautier, director of the Isautier house. Effect of co-fermentation of molasses and cane juice ? The first nose is suave and sweet and leaves room, to aeration, with fresh and spicy notes (mint, licorice) and salty notes, almost briny. The mouth is soft, full and silky with both sweet and fresh accents and bakery notes.
The finish is a mixture of sweetness and freshness.
