After a complicated period linked to the COVID, BVP manufacturers have returned to solid growth. So, On a sample of 26 key industrial players analyzed by studies echoes, Average turnover growth amounted to +17 % in 2023. The BVP, Sector of excellence in the food industry and symbol of French gastronomy, is changing. Innovation remains the cornerstone of industrial growth strategies to respond to societal trends and multiply consumption moments. As such, The offer continues to go upmarket as well as its sophistication both in the selection of raw materials and in the creativity of the recipes (fodder, toppings, Hybrid products ...). Manufacturers position themselves on premium (Extra-Ordinary chez Délifrance, Gourmet at Episens, Secrets of reflections of Gelfin’or at Vandemoortele), on the plant (Mademoiselle Desserts with Dodo Cookie Co, Bridor Vegetal, Délifrance Impact…), innovate in creative pastries, In flavors and forms, and in hybrid pastries, seek to diversify moments of consumption (Salted snacking for lunch break). Distribution side, Bakery brands renew their concepts and continue their expansion thanks to the financial support of funds, Private or cooperative groups (The French Bastards avec Experienced Capital, Occipan thanks to Arterris, Angel bakery with financial lov and lifestyle…).

Recomposition of the sector, conquest of the international

Since 2022, The French industrial BVP has been the subject of around thirty mergers and acquisitions. Six leaders in the sector have, notably, changed. As such, The last significant operation was, last October, Mademoiselle desserts' acquisition by Emmi. In parallel, The influence of the sector abroad encourages actors to raise their ambitions internationally. In Europe, Investments are concentrated in the United Kingdom, where more than fifteen factories are now under the French pavilion. But Spain, Italy, Germany, The Netherlands and Belgium are also similar to promising markets. Further, Great export opportunities are focused on the American market with high potential for French BVP products, as well as on Asia-Pacific (Japan and South Korea). Two key figures : +9 %, The average annual growth of the 26 key manufacturers in the BVP over the 2019-2023 period ; +20 %, The growth of the top 10 BVP manufacturers in 2023 (source : Les Echos Études).
