There are three of them, indeed, to run the store : Elina Kaellel, Mathieu Grasset and Thomas Metz. Everyone takes care of one of the three points of sale, and they share the work to respond to a demand for teas, of spices and coffees off the beaten track of industrial production and mass distribution and free from the uniformity of franchises. In Saint-Denis, Saint-Pierre and Saint-Gilles, in addition to a carefully chosen offer, These three points of sale have in common their atmosphere combining the inspiration of the traditional boutique, with jar shelves, to the modernity of committed commerce. Only natural products, from well-identified terroirs, whether they are teas, spices or coffee. The nature and origin of each product are specified on the labels.. Two brands were created by etc. : Oté Réunion for its tea blends and Cerise for specialty coffees roasted on site and packaged in bags. A modern-day boutique story
At the Saint-Gilles store, the largest and the last open, where is the roasting workshop, Thomas Metz offers coffee from the Indonesian island of Sulawesi. “We have known each other for twenty-five years. It all started with Elina and Mathieu and their tea offerings. They started by selling on fairground markets. Two years later, the first boutique opened in Saint-Pierre. The Oté Réunion brand was born. Then the offer extended to spices from Reunion and around the world, sold in bulk. The Saint-Denis store opened in 2012 with the same concept : teas and spices. Then came the specialty coffee project, always in the spirit of fair trade, and roasting ourselves. Mathieu and I took roasting training in 2018. The Saint-Gilles store with the roasting workshop opened in 2020.”
Advocacy for specialty coffees
The coffees are distributed in the three stores, but that of Saint-Gilles, equipped with a counter, also allows you to taste the products : a plus to make your choice. Fair trade specialty coffees represent 2% of the global coffee market, observes Thomas Metz to clarify the positioning of the brand. “Only pure origin coffee beans that we roast for fifteen minutes at 180 degrees. Nothing to do with ultra-rapid industrial roasting at 400 degrees. Every four to five months, we change our supplies. Our offer reflects the coffee harvest seasons around the world.
